Ingredients
Serves approximately 6:
- 1 kg of ripe tomatoes (fresh or good quality canned)
- 1 large onion, finely chopped
- 2 cloves of garlic, pressed
- 2 tablespoons of extra virgin olive oil
- 1 teaspoon of tomato paste
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried basil
- A pinch of sugar (optional, to balance the acidity)
- Salt and freshly ground black pepper, to taste
- 50mg of Shilajit Purlema Resin
- A few fresh basil leaves, for garnish (optional)
Instructions
- Preparing the tomatoes: If using fresh tomatoes, plunge them into boiling water for a few seconds to make peeling easier. Peel, seed, and roughly chop them. If using canned tomatoes, drain them lightly.
- Sauté the aromatics: In a large saucepan or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent and soft (about 5 minutes). Then add the crushed garlic and cook for another minute, being careful not to burn it.
- Add the tomatoes and spices: Add the chopped (or canned) tomatoes to the pan. Stir in the tomato paste, oregano, basil, sugar (if using), salt, and pepper. Mix well to combine all the ingredients.
- The secret touch: Gently add the Purlema shilajit resin. Stir gently to dissolve it, being careful not to overheat. The shilajit will slowly melt into the sauce, giving it its characteristic umami flavor.
- Simmer: Bring the sauce to a boil, then reduce the heat to low. Cover the pot and simmer for at least 30 minutes, or until the sauce has thickened and the flavors have developed. Stir occasionally to prevent the sauce from sticking to the bottom of the pot.
- Adjust the seasoning: Taste the sauce and adjust the seasoning if necessary. You can add more salt, pepper, sugar, or dried herbs according to your preferences.
- Serving: Serve the umami shilajit tomato sauce hot, over your favorite pasta, on pizza, or as a base for your stews. Garnish with a few fresh basil leaves, if desired.
Chef's Tips
- For an even richer and tastier sauce, you can add a finely chopped carrot and celery stalk along with the onion.
- If you don't have shilajit resin on hand, you can try adding a pinch of dried mushroom powder (such as porcini or shiitake) for a similar umami effect.
- For optimal preservation, allow the sauce to cool completely before transferring it to an airtight container and storing it in the refrigerator for up to 5 days. It can also be frozen.
Conservation
Shilajit umami tomato sauce can be stored in the refrigerator in an airtight container for 3 to 5 days. It can also be frozen for up to 3 months.
