Spaghetti Aglio e Olio is a true classic of Italian cuisine. This simple and quick recipe is perfect for evenings when you want to enjoy a comforting dish without spending hours in the kitchen. With basic ingredients that are often on hand, it embodies the very essence of Mediterranean cooking: authentic flavors and simple pleasure.
Often prepared in less than 20 minutes, this garlic spaghetti is ideal for an impromptu dinner or a gathering with friends. Let yourself be seduced by their delicate taste, enhanced by a hint of chili and good olive oil. Here’s how to make this iconic dish.
Ingredients
For 4 people:
- 400 g of spaghetti
- 4 cloves of garlic
- 60 ml of extra-virgin olive oil
- 1 red chili (or cayenne pepper)
- Fresh parsley, chopped (to taste)
- Salt (to taste)
- Grated Parmesan (optional)
Instructions
- In a large pot, bring salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente.
- Meanwhile, finely slice the garlic cloves and chop the chili.
- In a skillet over medium heat, add the olive oil and heat it. Add the sliced garlic and chopped chili, then sauté until the garlic is golden (be careful not to burn it).
- Once the spaghetti is cooked, drain it, reserving some of the cooking water.
- Add the spaghetti to the skillet with the garlic and chili. Mix well to coat the pasta in the flavored oil. If the mixture seems too dry, add a little of the reserved cooking water.
- Stir in the chopped parsley and adjust the seasoning with salt if necessary.
- Serve hot, adding grated Parmesan on top if desired.
Chef's Tips
For an even more intense flavor, use high-quality olive oil. You can also add lemon zest for a touch of freshness.
