Ingredients
For 4 servings:
- 300 g of pasta (spaghetti or linguine)
- 4 cloves of garlic, minced
- 60 ml of olive oil
- 1 bunch of fresh parsley, chopped
- 1 red chili (optional), sliced
- Salt and pepper to taste
- Grated Parmesan (for serving)
Instructions
- In a large pot, bring salted water to a boil and cook the pasta according to the package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and red chili (if using) to the skillet and sauté until the garlic is golden, being careful not to burn it.
- Once the pasta is cooked, drain it, reserving one cup of the cooking water.
- Add the pasta to the skillet with the garlic and toss well to coat the pasta with the fragrant oil.
- Stir in the chopped parsley and a bit of the reserved cooking water if needed to bring everything together. Season with salt and pepper.
- Serve hot, topped with grated Parmesan if desired.
Chef's Tips
For an even more flavorful variation, add halved cherry tomatoes to the skillet just after the garlic to roast them slightly. This will bring a touch of sweetness to your dish.
