Baked fish in parchment is a classic and healthy cooking method that preserves all the flavor and nutrients of the fish. This recipe evokes memories of summers spent by the sea, where the sea breeze carries with it scents of fresh herbs and lemon. It's an ideal dish for a night with friends or a light family meal. The simplicity of this preparation highlights the quality of the ingredients, allowing the fish to shine at the center of the plate.

By choosing fresh herbs like parsley and dill, accompanied by lemon wedges, you add a touch of freshness that enhances the flavor of the fish. This recipe is not only quick to prepare, but it also has the advantage of being cooked without added fats, making it a perfect choice for those looking to eat healthily without sacrificing taste.

Ingredients

For 4 people:

  • 4 fillets of white fish (cod, sea bream, or other)
  • 2 lemons
  • 1 bunch of fresh parsley
  • 1 bunch of fresh dill
  • 4 tablespoons of olive oil
  • Salt and pepper to taste
  • Parchment paper for cooking

Instructions

  1. Preheat your oven to 200°C (thermostat 6-7).
  2. Cut out 4 large rectangles of parchment paper.
  3. Place one fish fillet in the center of each rectangle of paper.
  4. Drizzle each fillet with a tablespoon of olive oil.
  5. Add slices of lemon on top of the fish, along with a few sprigs of parsley and dill.
  6. Season with salt and pepper to taste.
  7. Close the packets by folding the parchment paper to seal everything well.
  8. Place the packets on a baking sheet and bake for 20 minutes.
  9. When removing from the oven, gently open the packets to avoid letting the steam escape too quickly.
  10. Serve hot, accompanied by steamed vegetables or a green salad.

Chef's Tips

For an even more fragrant touch, you can add black olives or cherry tomatoes around the fish before sealing the packets. Feel free to experiment with your favorite herbs to customize the flavor.

Storage

Leftovers can be stored in the refrigerator in an airtight container for 2 days. Reheat gently in the oven to preserve the texture of the fish.
