The recipe for baked fish is a classic of Mediterranean cuisine, combining simplicity with delicate flavors. I discovered this recipe during a seaside trip, where fishmongers offered fresh daily catches, fragrant with herbs and a hint of lemon. Today, I share with you this recipe that evokes vacations and outdoor meals, while being easy to prepare at home.

Ingredients

For 4 people:

  • 4 fillets of white fish (such as cod or halibut)
  • 2 lemons
  • 4 tablespoons of olive oil
  • 1 bunch of fresh parsley
  • 1 bunch of fresh dill
  • 2 cloves of garlic
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. In a small bowl, mix the olive oil, the juice of one lemon, minced garlic, and chopped parsley and dill. Add salt and pepper to taste.
  3. Place the fish fillets on a baking sheet lined with parchment paper.
  4. Pour the oil and herb mixture over the fish fillets, making sure to coat them well.
  5. Slice the other lemon into rounds and place them on top of the fish.
  6. Bake the fish for 15 to 20 minutes, until cooked and easily flakes with a fork.
  7. Serve hot, accompanied by grilled vegetables or a green salad.

Chef's Tips

For an even tastier touch, you can add pitted black olives or capers to the herb mixture. Additionally, be careful not to overcook the fish to keep it tender and juicy.

Storage

Cooked fish can be stored in the refrigerator in an airtight container for 2 days. Gently reheat it in the oven to preserve its texture.
