I discovered this recipe during a seaside trip, where fishmongers offered fresh daily catches, fragrant with herbs and a hint of lemon. Today, I share with you this recipe that evokes vacations and outdoor meals, while being easy to prepare at home.
Ingredients
For 4 people:
- 4 fillets of white fish (such as cod or halibut)
- 2 lemons
- 4 tablespoons of olive oil
- 1 bunch of fresh parsley
- 1 bunch of fresh dill
- 2 cloves of garlic
- Salt and pepper to taste
Instructions
- Preheat the oven to 200°C (390°F).
- In a small bowl, mix the olive oil, the juice of one lemon, minced garlic, and chopped parsley and dill. Add salt and pepper to taste.
- Place the fish fillets on a baking sheet lined with parchment paper.
- Pour the oil and herb mixture over the fish fillets, making sure to coat them well.
- Slice the other lemon into rounds and place them on top of the fish.
- Bake the fish for 15 to 20 minutes, until cooked and easily flakes with a fork.
- Serve hot, accompanied by grilled vegetables or a green salad.
