Ingredients
Serves 6:
- 1 shortcrust pastry (homemade or store-bought)
- 200g of mixed red berries (strawberries, raspberries, blueberries, currants)
- 2 teaspoons of resin shilajit (Purlema recommended)
- 50g of coconut sugar (or whole cane sugar)
- 2 tablespoons of almond flour
- 1 egg (for glazing, optional)
- 1 tablespoon of lemon juice
Instructions
- Preheat your oven to 180°C (thermostat 6).
- Roll out the shortcrust pastry on a lightly floured work surface and line a tart tin with it. Prick the base with a fork.
- Spread the almond flour over the base of the tart. This will prevent the pastry from becoming soggy from the moisture of the fruit.
- In a bowl, gently mix the red berries, coconut sugar and lemon juice.
- Add the shilajit resin to the berries and gently mix to combine. Note : Do not use powdered shilajit in this recipe. The resin dissolves more easily and provides a more pleasant texture. If you have any questions about shilajit, please visit our information blog .
- Pour the mixture of red berries and shilajit over the tart base.
- If you wish, brush the edges of the tart with a beaten egg for a nice golden finish.
- Bake for 30-35 minutes, or until the pastry is golden brown and the red berries are stewed.
- Allow to cool slightly before enjoying.
Chef's Tips
- For an even more indulgent tart, add a tablespoon of red fruit jam to the base of the tart before spreading the almond powder.
- You can vary the red berries according to the season and your preferences. Blackberries and blackcurrants pair particularly well with shilajit.
- If you are using frozen berries, let them thaw and drain them well before mixing them with the other ingredients.
Conservation
This tart can be kept in the refrigerator for 2 to 3 days. For optimal enjoyment, take it out 30 minutes before serving.
