Ingredients

For 4 people:

  • 1 sea bream weighing about 1 kg, cleaned and scaled
  • 2 lemons (one for slices, one for juice)
  • 1 bunch of fresh coriander
  • 1 bunch of fresh parsley
  • 4 cloves of garlic, chopped
  • 3 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (thermostat 6).
  2. In a bowl, mix the olive oil, chopped garlic, the juice of one lemon, salt, and pepper.
  3. Place the sea bream on a baking sheet lined with parchment paper.
  4. Make diagonal slashes on each side of the fish to allow the flavors to penetrate.
  5. Brush the sea bream with the olive oil and garlic mixture, making sure to massage the fish well.
  6. Slide lemon slices and fresh herbs inside the sea bream.
  7. Place a few slices of lemon on top of the fish.
  8. Bake the sea bream for about 25 to 30 minutes, or until the flesh is opaque and flakes easily.
  9. Serve hot, accompanied by grilled vegetables or a fresh salad.

Chef's Tips

For an even stronger flavor, you can add black olives or capers to the stuffing of the sea bream. Feel free to vary the herbs according to your preferences; thyme or rosemary also pair wonderfully with this fish.
