Summer, with its hot, sunny days, calls for something refreshing and light. What better way to quench your thirst and delight your taste buds than with homemade lemonade? Forget overly sweet and artificial store-bought drinks and try this honey and rosemary lemonade recipe. It's simple, natural, and incredibly delicious.

This lemonade isn't just a drink; it's an invitation to relax. Imagine yourself comfortably seated on your patio, a glass of this ice-cold lemonade in hand, the intoxicating scent of rosemary wafting through the air. It's a moment of pure bliss, a refreshing interlude in the daily hustle and bustle.

The combination of honey and rosemary adds a unique and refined touch to this quintessential summer drink. The honey subtly sweetens the lemonade, while the rosemary lends it herbaceous and slightly woody notes. This lemonade is perfect for picnics, barbecues, or simply for quenching your thirst throughout the day.

Ingredients

Serves 4:

  • 1 liter of water
  • The juice of 4 lemons
  • 4 tablespoons of honey (preferably rosemary honey for a perfect match!)
  • 2 sprigs of fresh rosemary
  • Ice
  • Lemon slices for decoration (optional)

Instructions

  1. Heat 250 ml of water in a saucepan.
  2. Add the honey and the sprigs of rosemary.
  3. Let it infuse over low heat for 5 minutes, stirring occasionally so that the honey dissolves completely.
  4. Remove the pan from the heat and allow the infusion to cool completely.
  5. Strain the infusion to remove the rosemary sprigs.
  6. In a carafe, mix the cooled infusion with the lemon juice and the remaining water (750 ml).
  7. Add ice cubes to your liking.
  8. Serve the lemonade chilled, optionally garnished with a few lemon slices and a sprig of rosemary.

Chef's Tips

  • For a lemonade with a more intense rosemary flavor, you can infuse the rosemary sprigs for longer (up to 15 minutes).
  • You can also add other aromatic herbs to your lemonade, such as mint, thyme, or lavender.
  • If you don't have fresh rosemary, you can use dried rosemary (about 1 teaspoon).
  • For a sparkling version of this lemonade, replace some of the water with sparkling water.

Conservation

This lemonade will keep in the refrigerator for 2 to 3 days. Remember to shake it well before serving, as the honey may tend to settle at the bottom of the pitcher.

An interesting variation is to add a pinch of sea salt to the lemonade. This enhances the flavors and balances the acidity of the lemon.
