- 8 medium-sized endives
- 50g of butter
- 2 oranges (the juice and zest of one orange)
- 2 tablespoons of liquid honey
- Salt and freshly ground pepper
- A few sprigs of fresh thyme (optional)
Instructions
- Preparing the endives: Wash and dry the endives thoroughly. Cut them in half lengthwise. Remove the bitter core at the base of each half.
- Browning the endives: In a large frying pan, melt the butter over medium heat. Add the endives, cut side down, and brown them for about 5 minutes, until lightly caramelized.
- Braising: Turn the endives over. Add the juice and zest of one orange, the honey, salt, and pepper.
