The idea for this Nice Cream came to me on a hot summer day. I was craving ice cream, but without the heavy, processed ingredients of store-bought ice cream. I had some ripe bananas and peanut butter on hand, and the rest, as they say, is history! This recipe has become a staple in my kitchen, and I'm sure it will become one in yours too.

Imagine: a spoonful of this smooth and creamy ice cream, the sweetness of banana perfectly complementing the crunch of peanut butter... A pure moment of bliss, guaranteed free of additives and preservatives. So, ready to give it a try?

Ingredients

Serves 4:

  • 4 ripe, frozen bananas (approximately 500g)
  • 2 tablespoons of peanut butter (approximately 40g)
  • 1 tablespoon of plant-based milk (almond, soy, etc.) (optional, for a creamier consistency)
  • 1/2 teaspoon of vanilla extract (optional)
  • A pinch of salt

Instructions

  1. Remove the frozen bananas from the freezer 15 to 20 minutes before starting preparation to make them easier to blend. If your bananas are too hard, you can let them thaw a little longer.
  2. Cut the frozen bananas into pieces 2 to 3 cm thick. This will make blending much easier.
  3. Add the frozen banana pieces , peanut butter, plant-based milk (if used), vanilla extract (if used) and salt to a food processor or powerful blender.
  4. Blend at high speed for 2 to 3 minutes, scraping down the sides of the bowl occasionally, until you get a smooth, creamy texture with no ice lumps.
  5. Taste and adjust the sweetness by adding a little more peanut butter or plant-based milk if necessary.
  6. Serve immediately. You can add toppings such as chocolate chips, nuts, coconut flakes, or any other ingredient you like.

Chef's Tips

For an even creamier ice cream, let the Nice Cream rest in the freezer for 30 minutes after preparation. This will allow the flavors to develop and the ice cream to firm up a bit.

Important tip: Use very ripe, almost brown bananas. They will result in a softer, creamier ice cream. If your bananas aren't ripe enough, they may make the ice cream harder and less flavorful.

Conservation

Store the Nice Cream in an airtight container in the freezer for 2 to 3 days. Remove it from the freezer 10 to 15 minutes before serving for optimal texture.
