Ingredients
Serves 6:
- 1 shortcrust pastry (homemade or store-bought)
- 500g of ripe and fragrant tomatoes (preferably heirloom varieties)
- 2 tablespoons of wholegrain mustard
- 2 tablespoons of olive oil
- 1 clove of garlic
- A few sprigs of fresh thyme
- A few fresh basil leaves
- Salt and freshly ground pepper
- 100g of fresh goat cheese (optional)
Instructions
- Preheat your oven to 180°C (thermostat 6).
- Spread the shortcrust pastry onto a baking sheet lined with baking paper.
- Spread the base of the tart with the old-fashioned mustard.
- Wash and slice the tomatoes thinly.
- Arrange the tomato slices on the dough, slightly overlapping them.
- Finely chop the garlic and sprinkle it over the tomatoes.
- Drizzle everything with olive oil.
- Strip the leaves from the fresh thyme and basil and scatter them over the tart.
- Season generously with salt and pepper .
- If you wish, crumble the fresh goat cheese over the tart.
- Bake for 30 to 35 minutes, or until the pastry is golden brown and the tomatoes are slightly caramelized.
- Allow to cool slightly before enjoying.

- For an even crispier crust, you can pre-bake it blind for 10 minutes before adding the filling.
- Feel free to vary the pleasures by using different varieties of tomatoes (beefsteak, Black Krim, etc.).

Conservation
