Ingredients

Serves 4:

  • 1 can (400g) of black beans, rinsed and drained
  • 1 can (400g) of sweetcorn, drained
  • 1 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 jalapeño pepper (optional), finely chopped
  • 2 tablespoons of chipotle sauce
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin
  • 1/2 teaspoon of paprika
  • Salt and black pepper, to taste
  • 12 corn tortillas
  • Your favorite toppings: chopped fresh coriander, sliced ​​avocado, grated cheese, sour cream, salsa...

Instructions

  1. Preheat a pan over medium heat. Add the olive oil and cook the red onion and red pepper for 5 minutes, until tender.
  2. Add the jalapeño (if using), cumin, paprika, salt, and pepper. Cook for 1 minute, stirring constantly.
  3. Stir in the black beans and corn. Mix well and cook for 5 minutes, until heated through.
  4. Remove from heat and add the chipotle sauce. Mix again.
  5. Heat the tortillas according to the package instructions. You can cook them dry in a pan, in the oven, or in the microwave.
