Inspired by the sun-drenched markets of Provence, this recipe combines the creamy texture of quinoa with the crispness of cucumbers and tomatoes. Feta cheese adds a salty, creamy note that elevates the dish. A complete meal, ideal for a light lunch, a summer dinner, or a picnic in the countryside.
Ingredients
Serves 4:
- 150g of quinoa
- 300ml of water
- 1 cucumber, diced
- 250g of cherry tomatoes, cut in half
- 100g of crumbled feta cheese
- 1/4 cup olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of dried oregano
- Salt and freshly ground black pepper, to taste
- Fresh basil leaves, for garnish (optional)
Instructions
- Rinse the quinoa under cold water until the water runs clear.
- In a saucepan, bring the water to a boil. Add the quinoa, reduce the heat and simmer for 15 minutes, or until all the water is absorbed and the quinoa is cooked.
- Remove from heat and allow to cool completely.
- In a large bowl, combine the cooled quinoa, cucumber, cherry tomatoes, crumbled feta, olive oil, red wine vinegar and dried oregano.
- Season with salt and black pepper to taste.
- Gently mix all the ingredients.
- Garnish with fresh basil leaves, if desired.
- Serve immediately or refrigerate for up to one hour before serving for best flavor.

For an even more flavorful salad, try adding Kalamata olives, capers, or toasted almonds. You can also substitute fresh goat cheese for the feta. Feel free to experiment with different herbs, such as flat-leaf parsley or fresh mint.
