Ingredients

Serves 4:

  • 250g of Puy green lentils
  • 3 medium carrots
  • 1 shallot
  • 2 tablespoons of wholegrain mustard
  • 4 tablespoons of olive oil
  • 2 tablespoons of red wine vinegar
  • 1 tablespoon of chopped fresh parsley
  • Salt and pepper

Instructions

  1. To cook the lentils: Rinse the lentils in cold water. Place them in a saucepan with cold water (about three times their volume). Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until tender but still firm. Drain and let cool.
  2. Prepare the carrots: Peel and grate the carrots.
