Ingredients
Serves 4:
- 250g of Puy green lentils
- 3 medium carrots
- 1 shallot
- 2 tablespoons of wholegrain mustard
- 4 tablespoons of olive oil
- 2 tablespoons of red wine vinegar
- 1 tablespoon of chopped fresh parsley
- Salt and pepper
Instructions
- To cook the lentils: Rinse the lentils in cold water. Place them in a saucepan with cold water (about three times their volume). Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until tender but still firm. Drain and let cool.
- Prepare the carrots: Peel and grate the carrots.
- Prepare the vinaigrette: In a bowl, combine the wholegrain mustard, olive oil, red wine vinegar, salt and pepper. Mix well until you have a smooth vinaigrette.
- To assemble the salad: In a large salad bowl, mix the cooked lentils, grated carrots and finely chopped shallot.
