Ingredients
For 2 people:
- 1/2 cup of chia seeds
- 1 cup of coconut milk (full-fat, for a creamier texture)
- 1/4 cup maple syrup (or other liquid sweetener to taste)
- 1 teaspoon of vanilla extract
- 1/2 cup of fresh or frozen red berries (raspberries, blueberries, blackberries...)
- Optional: a few slivered almonds for decoration
Instructions
- In a bowl, mix the chia seeds , coconut milk , maple syrup and vanilla extract .
- Stir the mixture well to ensure the chia seeds are evenly distributed.
- Cover the bowl and refrigerate for a minimum of 4 hours , or ideally overnight, to allow the chia seeds to swell and form a pudding-like texture.
- Before serving, rinse and drain the berries if necessary. If using frozen berries, let them thaw slightly.
- Divide the chia pudding between two bowls or small glasses.
- Garnish with fresh red berries and, if desired, flaked almonds.
- Serve immediately and enjoy!
Chef's Tips
For an even more indulgent version, add a tablespoon of coconut puree or a pinch of cinnamon to the mixture.
Feel free to vary the berries according to your preferences and the season. Pieces of banana or mango would add an extra tropical touch.
Conservation
Chia pudding can be kept in the refrigerator for 3 to 4 days . For better preservation, it is advisable to cover it tightly.
