Ingredients
For a large pizza:
- 1 large cauliflower (approximately 800g)
- 1 egg
- 100g of grated mozzarella
- 50g of grated Parmesan cheese
- 1 teaspoon of dried oregano
- 1/2 teaspoon of garlic powder
- Salt and pepper, to taste
- For the topping: Tomato sauce, fresh mozzarella, pepperoni, mushrooms, olives, peppers, etc.
- A little rice or corn flour to prevent the dough from sticking
Instructions
- Preheat your oven to 200°C (gas mark 6-7). Line a baking tray with baking paper.
- Prepare the cauliflower: Wash and cut the cauliflower into florets. Place them in a food processor and blend until you obtain a consistency similar to couscous semolina.
- To cook the cauliflower: Place the blended cauliflower in a microwave-safe container and cook for 5-7 minutes, until tender. Alternatively, you can steam it for about 10 minutes.
- Drain the cauliflower: This is the crucial step! Place the cooked cauliflower in a clean tea towel and squeeze it as much as possible to remove all the water. The more water you remove, the crispier your pastry will be.
- Prepare the dough: In a bowl, mix the drained cauliflower, egg, grated mozzarella, grated parmesan, oregano, garlic powder, salt and pepper. Mix well until you obtain a smooth dough.
- Shape the dough: On a baking sheet lined with parchment paper, spread the cauliflower dough into a circle about 30 cm in diameter. Try to make a thin, even dough. Add a little rice or corn flour if the dough is sticky.
- Pre-bake the dough: Bake the dough for 15-20 minutes, or until lightly golden.
- Top the pizza: Take the dough out of the oven and top it with tomato sauce, fresh mozzarella and the ingredients of your choice (pepperoni, mushrooms, olives, peppers, etc.).
- Bake again: Bake the topped pizza for 10-15 minutes, or until the mozzarella is melted and golden.
- Enjoy! Take the pizza out of the oven, let it cool for a few minutes and enjoy!
Chef's Tips
- For an even crispier crust, you can add a tablespoon of almond flour to the dough.
- Feel free to vary the pleasures by using different types of cheese (gorgonzola, goat, etc.) or by adding fresh herbs (basil, parsley, etc.).
- For a vegetarian pizza, replace the pepperoni with grilled vegetables (eggplant, zucchini, etc.).
- For a touch of originality, add a pinch of Espelette pepper to the dough or filling.
Conservation
Cauliflower crust pizza will keep in the refrigerator for 2-3 days. You can reheat it in the oven or in a pan. It can also be frozen after pre-baking the crust and topped later.
A secret to a successful pizza: don't be afraid to overload on toppings, but be careful not to make the dough too wet!
