  • 50g of seeds (sunflower, pumpkin, flax, chia, etc.)
  • 2 tablespoons of honey (or maple syrup)
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt
  • 1 tablespoon of coconut oil (or olive oil)
  • (Optional): Spices of your choice (cinnamon, ginger, nutmeg)
  • (Optional): Dried fruit (raisins, cranberries)

Instructions

  1. Preheat the oven to 160°C (thermostat 5-6).
  2. Roughly chop the nuts.
  3. Mix together in a large bowl the oat flakes, chopped nuts, seeds, honey (or maple syrup), vanilla extract, salt, and spices if using.
  4. Add the coconut oil and mix well so that all the ingredients are well coated.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. Bake for 20 to 25 minutes, stirring halfway through, until the granola is golden and crispy.
  7. Allow to cool completely before storing in an airtight jar.
