Ingredients
For approximately 15 Energy Balls:
- 150g of cooked and drained chickpeas
- 100g of oat flakes
- 50g of dark chocolate chips (minimum 70% cocoa)
- 2 tablespoons of peanut butter (or other nut butter)
- 1 tablespoon of honey or maple syrup
- 1 teaspoon of vanilla extract
- 1 pinch of salt
- (Optional) 1/4 cup chopped nuts (almonds, cashews)
Instructions
- Rinse and drain the chickpeas thoroughly . Make sure they are completely dry for a better texture.
- Add the chickpeas to a food processor and blend until you get a smooth and creamy puree.
- Incorporate the oat flakes, chocolate chips, peanut butter, honey, vanilla extract and salt into the chickpea puree.
- Mix again until you obtain a smooth, sticky dough. If the dough is too dry, add a tablespoon of water at a time until you reach the desired consistency.
- (Optional) Add the chopped nuts and blend briefly to incorporate them.
- Form small balls about 2 cm in diameter using your hands.
- Place the energy balls in the refrigerator for at least 30 minutes to allow them to harden and the flavors to meld.
