No-Bake Energy Bites with Shilajit, Dates & Nuts
These no-bake energy bites are perfect for a quick and healthy breakfast, a revitalizing snack, or even a light dessert. They combine the benefits of shilajit, a powerful adaptogen, with the sweetness of dates and the crunch of nuts. A simple and delicious recipe to naturally boost your energy!
The idea came to me during a trip to Nepal, where I discovered the amazing properties of shilajit. I looked for a way to easily incorporate it into my daily diet, and these bites were a revelation. They are not only delicious, but also incredibly nutritious.
Prepare them in minutes and keep them in the refrigerator for a quick and energizing snack throughout the week. A true source of vitality at your fingertips!
Ingredients
For approximately 15 bites:
- 100g of pitted Medjool dates
- 50g of nuts (walnuts, almonds, or a mixture)
- 2 teaspoons of pure shilajit (check the quality and purity of the product)
- 1 tablespoon of coconut oil (or other neutral vegetable oil)
- 1 teaspoon of vanilla extract
- A pinch of salt
- (Optional) 1 to 2 tablespoons of raw cacao powder for a chocolate version
Instructions
- Start by pitting the dates if necessary. You can also use ready-to-use pitted dates.
- In a food processor or powerful blender, blend the dates until you obtain a smooth, sticky paste.
- Add the nuts and blend until roughly chopped. Avoid over-blending to retain some texture.
- Stir in the shilajit, coconut oil, vanilla extract, and salt. Blend again until all ingredients are well combined and the paste is smooth.
- (Optional) Add cocoa powder if you want a chocolate version. Blend briefly to combine.
- Form small bites with your hands or using small spoons. You can roll them in cocoa powder, chopped nuts, or leave them as they are.
- Place the bites in the refrigerator for at least 30 minutes to allow them to harden.
- Serve chilled and enjoy!
Chef's Tips
For a touch of indulgence, add a pinch of cinnamon or cardamom to the dough. You can also replace the walnuts with other dried fruits such as almonds, hazelnuts, or sunflower seeds.
Important tip: Make sure you use high-quality shilajit from a reliable source. The quality of shilajit can vary considerably.
Conservation
Store your energy bites in the refrigerator in an airtight container for 5 to 7 days. They also keep well in the freezer for several weeks.
