Ingredients
Makes approximately 12 blinis:
- 125g of buckwheat flour
- 125 ml of milk (or plant-based milk)
- 1 egg
- 1 teaspoon of baking powder
- 1 pinch of salt
- 1 tablespoon of melted butter (or vegetable oil)
- Butter or oil for cooking
Instructions
- In a bowl, mix the buckwheat flour, baking powder and salt.
- In another bowl, beat the egg with the milk and melted butter.
- Gradually pour the liquid mixture over the dry ingredients, mixing well to avoid lumps. The batter should be smooth and homogeneous.
- Let the batter rest for about 15 to 30 minutes. This resting time allows the buckwheat flour to fully hydrate and the blinis to become softer.
- Heat a lightly oiled or buttered pan over medium heat.
- Pour a small ladleful of batter into the hot pan to form a blini.
- Cook for approximately 2-3 minutes on each side, until golden brown.
- Repeat the process with the rest of the dough.
- Serve the blinis warm, with your choice of toppings. Discover more delicious recipe ideas on our recipe blog !

- Feel free to flavor the dough with chopped fresh herbs (chives, dill) or spices (pepper, nutmeg).
- For a sweet version, add a tablespoon of sugar or honey to the dough.
- If you don't have buckwheat flour, you can replace it with a mixture of wheat flour and rice flour (50/50).
- Blinis can be kept in the refrigerator for 24 hours. Reheat them in a pan or oven before serving.
