Ingredients
For 2 people:
- 2 slices of wholemeal sourdough bread
- 1 ripe avocado
- 1/4 of a lime
- 1/2 teaspoon of salt
- 1/4 teaspoon of freshly ground black pepper
- 100g of cherry tomatoes, cut in half
- 1 egg (optional)
- A few fresh coriander leaves, chopped (optional)
- A pinch of Espelette pepper (optional)
- extra virgin olive oil
Instructions
- Toast the bread: Toast the slices of wholemeal sourdough bread until golden and crispy.
- Preparing the avocado: Cut the avocado in half, remove the pit and mash the flesh with a fork. Add the juice of a quarter of a lime, salt, and black pepper.
- To assemble the toast: Spread the avocado puree on the toasted bread slices.
- Add the toppings: Distribute the halved cherry tomatoes over the avocado.
- Poached egg (optional): If you would like to add an egg, prepare a poached egg and place it gently on the avocado toast.
