Follow the steps below to create this culinary masterpiece that will delight your guests.

Ingredients

For 4 people:

  • 1.5 kg of lamb (shoulder or leg)
  • 3 tablespoons of herbs de Provence
  • 4 cloves of garlic, minced
  • 4 carrots, cut into sticks
  • 500 g of potatoes, cut into cubes
  • 2 onions, quartered
  • 4 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a large bowl, mix the olive oil, herbs de Provence, minced garlic, salt, and pepper.
  3. Coat the lamb with this mixture, ensuring it is well covered.
  4. In a large roasting pan, arrange the carrots, potatoes, and onions, then place the lamb on top.
  5. Put everything in the oven and roast for about 1.5 hours, or until the meat is well cooked and tender. Baste the lamb with the cooking juices every 30 minutes.
  6. Once cooked, remove the lamb from the oven and let it rest for 10 minutes before carving.
  7. Serve hot, accompanied by the roasted vegetables.

Chef's Tips

For an even more pronounced flavor, you can marinate the lamb in the herbs and olive oil for a few hours or even overnight. This will allow the flavors to penetrate the meat well.

Storage

Leftover roasted lamb can be stored in the refrigerator in an airtight container for 3 to 4 days. You can also use it to make a delicious sandwich or salad.
